Our COMPASSION Cabernet Sauvignon is a single vineyard, estate reserve wine. COMPASSION comes from the same Yountville soils, the same lineage, and is of the same viticultural craftsmanship as its peers. We age our wine in French Oak barrels at our winery. COMPASSION is sourced from organic grapes harvested adjacent to the world famous aforementioned labels…estate grown cabs that command from $100 to over $2000 per bottle.

BACKGROUND
The 2021 Yountville Compassion Cabernet Sauvignon is an exceptional wine that showcases remarkable balance and complexity. From the first sip, it impresses with pronounced notes of black cherries and dark fruit, creating a rich and inviting profile. The wine's structure provides a satisfying and well-rounded experience upon the palate. Born of the special soil of the Yountville viticultural area, COMPASSION combines both old and new world wine-making techniques, we strive to create unabashedly flavorful wines buoyed by the spirit of giving back. Drawing upon the diversity in their backgrounds, origins, and experience, our Winemaking Team has stuck out on a bold, creative path for AWINECO wines. Tapping into decades of innovative grape growing practices and combining both old and new world winemaking techniques.

APPELLATION
THE YOUNTVILLE AMERICAN VITICULTURAL AREA (AVA) is located in Napa County, CA. With only 3,000 planted acres to wine grape vineyards, the Yountville area is known for big, full- flavored red grape varietals like Cabernet Sauvignon with concentration and depth. This appellation produces Cabernet Sauvignon with structure and intense, dark fruit flavors.

WINEMAKING
After night and early morning harvest, the grapes went through an extended maceration on the skins for up to two weeks during fermentation to extract depth of flavor. The wine was then gently pressed, racked into new French oak barrels, and aged for a minimum of 18 months. Individual barrel lots were then selected for the final blend. adding additional, texture and intensity. After blending, the wine received a gentle filtering prior to bottling.

WINE NOTES
On the nose, it reveals pronounced aromas of black cherries and dark fruit, underscored by subtle hints of caramel, coconut, and vanilla. These aromatic components are well-integrated, providing a harmonious bouquet. On the palate, the wine demonstrates impressive viscosity and weight, contributing to a robust structure. The acidity is meticulously balanced, supporting the wine's framework and enhancing its overall freshness. This balance is pivotal in maintaining the wine's lively character while complementing its rich fruit flavors. The mid-palate is characterized by a seamless integration of flavors, where the dark fruit notes are enriched by the underlying sweetness of caramel, providing an encore of those delicate nuances of coconut and vanilla. The wine's finish is long and elegant, reflecting its well-rounded nature and meticulous craftsmanship.

The color transitions beautifully from a subtle purple to a vibrant ruby red, hinting at the wine's depth and richness even before the first taste. The acidity is very well balanced, enhancing the wine's structure and ensuring a lively, refreshing quality that perfectly complements the deep fruit flavors. As the wine opens up, beautiful notes of caramel emerge, adding a layer of sweetness that is complemented by subtle hints of coconut and vanilla. These flavors weave together seamlessly, enhancing the wine's depth and complexity.
